I know I have been delinquent in posting my shopping trips this week, but that’s because…I DIDN’T go shopping! Actually that’s not totally true. I tried Rite Aid on Monday morning, but they were already wiped out of EVERYTHING I wanted to get. I was super-bummed. Major pouting ensued. I guess I have to get there on Sunday…
And the CVS deals just weren’t exciting enough to get me out of the house in this heat. Plus, Tues-Thurs I had three of the busiest days of the summer. Appointments galore.
I didn’t even make the mega-event sale at Kroger, which I’ll probably regret.
But I didn’t need to. Because two weeks ago, I did some freezer cooking and all I needed at the grocery last week was snacks for the kids, which I spent $17 on at Aldi. All I needed this week was milk & bananas and tortilla chips, which I spent $5.16 on at Kroger. So even though I spent about twice as much as I usually spend on groceries two weeks ago to make my freezer meals, I more than made up for it by not hardly spending anything these last two weeks!
Because I am lazy, I freezer-cooked from Once A Month Mom’s no-cook recipes. That’s right, MEAL ASSEMBLY people. It’s the WAY TO GO! Since then I’ve just pulled stuff out of the freezer to thaw and thrown it either in the crock pot or the oven. It’s been SO easy!! And we’ve had plenty of leftovers too, so I still have about 4 meals left after two weeks (I made 11 originally.)
Here’s what I made:
- Freezer Beef Stew
- Ultimate Beef Stroganoff
- Lemon Chicken with Veggies
- Dump Chicken with Grapes
- Islander Pork Roast
- Asian Peanut Butter Pork Chops (so good you MIGHT DIE)
- Black Beans and Brown Rice (which you DO have to cook a little but it’s easy!)
When I go to the grocery this week I’m going to get some things to “assemble” more things on the no-cook recipe list. I really recommend giving this a try if you haven’t already! I really do not enjoy cooking, but I really DO enjoy pulling meals out of the freezer and throwing them in the crock pot!
