If you’ve been reading this blog for awhile you might know that I can be a little passionate about doing good. Whether it’s raising money for a friend fighting cancer, helping fit kids in need with new shoes and socks, or walking to raise funds to better the lives of people in my area with Down syndrome, doing good makes me happy. And I am doing it not because I am good, but because I truly believe that God calls us to love our neighbors as ourselves. The last thing I tell my kids before they go to school every morning is “Have a good day! Love your neighbor!” And every night when I put Sophie to bed, I pray that God would help her to love her neighbors. My kids know this is important to me, and I pray they will embrace this as they grow up.

I recently found out about a brand called Project 7 that also loves to love on their neighbors, and they do this by making products for good. Naturally this company’s mission really appeals to me! It’s so simple but so awesome – the profits from the products they make – from gum to bottled water to coffee – all give back to do things like provide meals for hungry American families and plant trees to keep our ecosystem healthy.

I really, really, really LOVE that this company is built on doing good!! LOVE IT! It’s so simple, and it inspired me to give back in a simple way, too. So I headed to my local Meijer and went a-shopping, as you do. I picked up some Project 7 gum:

 I also purchased ingredients to make a meal for a family I’ve been thinking about.  (Aaaand some other things we needed and a bunch of stuff for Sophie’s birthday party in November because it was on clearance! SCORE!) I do love making a meal as a simple way to show kindness. Especially if it’s a surprise!

I got a lot of things my family needed AND the ingredients for my meal and Project 7 gum. Can’t resist a 10 for $10 and get the 11th free sale at Meijer!

The family I chose to make my meal for is not exactly “needy” in the typical sense – I chose a friend of mine who is a single mom (a GREAT mom) to three great children, who works really, really hard, and who rarely gets a break. Someone who could use a night when she doesn’t have to come home from work, strap a fussy baby into the Ergo, and make dinner. Tonight, she will get to come home and snuggle the baby while she re-heats a meal that was made for her and enjoys some special treats that her friend threw in.

Before I knew her, my BFF was a single mom with two children who worked really, really hard and rarely got a break. So I’ve got a soft spot for those awesome mamas who do it all. And love the crap out of their kids.

You guys, I have three kids, and I cannot imagine doing it all on my own! Bobby works later than most and I whine about that sometimes. But I shouldn’t, because I am not a single mom. I am not working to provide for my family and do ev-er-y-thing else that 3 children and a household need.

I have been thinking about this friend a lot lately. Learning about Project 7  gave me the impetus to put those thoughts into action. So I planned out a couple of my favorite recipes, loaded up my cart at Meijer, and got cooking! And I used my crockpot for each recipe!

The main dish is maple-mustard chicken sandwiches. You read that right. They are delicious!

All you need for this recipe is chicken, maple syrup (I chose praline-maple to change it up a bit), spicy brown mustard, and garlic.

I know this seems like a weird combo, but it is super-delicious, I promise!

I first began experimenting with maple and mustard after making this recipe here, so that was the inspiration for the recipe I used here – I just made it my own.

Maple-Mustard Chicken Sandwiches

Ingredients:

2 lbs. frozen chicken breast tenders

1/2 cup maple syrup (choose whatever flavor you like, plain maple is also delish.)

5 tbsp. spicy brown mustard

1 clove garlic, pressed or minced

Combine all ingredients in a slow cooker. Cook for 4 hours on high or 6 hours on low. Chicken should  be very tender. Shred with two forks and drain excess liquid. Serve on bread or sandwich buns. Makes 8 sandwiches.

I also made smashed garlic potatoes and threw in some microwave-steamable sweet kernel corn, as well as some treats for dessert!

It was as easy as can be, and reminded me that giving back doesn’t need to be this huge, overwhelming, time-consuming, back-breaking effort. It can be as simple as giving a hard-working mama the night off from cooking or buying a pack of gum from a company whose profits go to work feeding our nation’s hungry.

It can be as simple as leaving a pack of gum in your mailbox with a note for your mail carrier.

Or the person who takes care of your kid in the nursery so you can enjoy church.

Or it could be as simple as buying an extra pack of gum for your cashier at Meijer and telling him or her about the Project 7 mission.

As you’re reading this, a surprise package is on its way or has already been delivered to my friend.

Last week, we had two great adventures with our friends the Minors and their kids Jay and Joy. The first adventure, on Labor Day, was the Rapson family’s first-ever trip to our county fair. Even though it is close to our house, I’ve never been in all my 36 years! The second adventure was the Buddy Walk for our local Down syndrome association, where we walk with the Minors in honor of Joy and to raise funds for all the wonderful people in our area with Down syndrome and their families.

Both adventures were fabulous! First, the fair! I really can’t believe I’ve never been before. We had a great time!

Sophie and Jay are the same age and both pretty fearless, so they were inseparable the whole time. Jessica and I *may* have already started planning their wedding.

Joshua was typically less adventurous (shocker!) He liked exactly two rides, both of which stayed on the ground but spun so fast they made me ill! He rode this one, with Jonah, but Jonah bailed before it even started. 🙂

It really was a fabulous day. At the end we all went home happy and tired. Success! We had a great time with our pals, and it was nice to spend some time together just chillin’ before the big event we had all been waiting for…the Buddy Walk!! Saturday morning we got up early to join a couple thousand other people at our Dayton Dragons baseball stadium, 5/3 Field.

Team Peace, Love, & Joy was pretty BIG this year! And we raised almost $3,000 together! My family alone raised over $600. THANK YOU to everyone who supported us! This was the first year we had Joshua and Sophie raise funds, and they raised $40 and $45 respectively. I was very proud! Thanks to their big supporters! 🙂 I think they are starting to “get” why it’s important to raise funds for our friends with Down syndrome.

The walk was awesome – it was so great to see ALL those people coming out in support of their friends and family members with Down syndrome.  My favorite part was at the start when a few dozen college baseball and basketball players from the University of Dayton formed a tunnel for kids to run through and get high-fives. The joy those special kids were feeling as they were cheered on – wow! To watch it was priceless! I am very thankful to those college kids for coming out and helping some people with Down syndrome feel really COOL.

All in all, it was a beautiful event. And I was reminded again that people with Down syndrome are just like us. They have an extra chromosome but they’ve got two arms, two legs, and a want to live happy, full lives chock with good relationships, fun experiences, hard work, achievement, disappointments, ups, downs, good, bad, adventures and everyday normal.

After the fair Monday and again on Saturday, my husband, who has a soft spot for little girls as many daddies do, said, “Man, Joy is just so beautiful. She is just such a pretty little girl.”

He didn’t say, “She’s so beautiful for a child with Down syndrome.” Because she’s just beautiful.  Beautiful, period. Just like any child (except for you know, she’s exceptionally beautiful. Not that I’m biased) you might see who takes your breath away.

I think her life is going to be filled with a lot of “She’s so ________!” Period. Exclamation point! I’m very happy to be one of the friends and family who will support her on her way.

Thanks again everyone who supported our efforts in raising funds for our friends in the Dayton area with Down syndrome. It matters!

I’ve got THE Joy, Joy, Joy!

This is my friend, Joy Marie Minor. Or, Baby Joy as I like to call her. (Although she is a big girl now at 16 months old, I think I can still get away with calling her “baby” for awhile.) If you’ve been reading this blog for the past year or so, you’ve seen Joy here before a few times. Last year Joy and her parents Paul and Jessica inspired me to get involved with our local Buddy Walk for Down syndrome and I raised over $600 for Team Peace, Love, & Joy! Our team total fundraising was over $3,000!

Joy has had a BIG year since last year’s Buddy Walk. She’s worked hard in her therapies and can now sit up all by herself! She knows lots of sign language signs thanks to her ASL-professional Mommy and Daddy. She’s watched her big brother tackle kindergarten and she’s secured talent representation with Down Syndrome in Arts and Media and had had TWO professional modeling jobs, one for Infantino’s Everybody Plays campaign (first plane ride! To California!) and one for Sweet Petunia Clothing (which big brother Jay {who I want Sophie to marry because then I will have the most exquisite grandchildren eva-ah} was also a part of). Joy’s beautiful face is changing the way our society views people with disabilities. Woot woot!

One of Joy’s photos from the Sweet Petunia shoot also made her the cover girl for this year’s Buddy Walk! If you’re local to Dayton, you’ll start seeing this billboard off of I-75 this week! Go Joy!!

Obviously, Joy is beautiful. She is sweet, she is smart,  she is funny, and she is a hard worker. But do you know what Joy’s greatest asset is?

Her wonderful family.

This baby girl hit the jackpot in the family department. She has the most amazing mom, dad, and big brother who work hard to make sure she’ll get all the resources she needs to reach her full potential. She also has two stellar sets of grandparents, not to mention aunts, uncles and cousins who love and encourage her.

And one of her family’s biggest assets?

The Miami Valley Down Syndrome Association.

The MVDSA is a volunteer-lead non-profit organization that provides support to individuals with Down syndrome and their families living in our area. Joy’s mom, Jessica, says, “We were introduced to the Miami Valley Down Syndrome Association (MVDSA) right after Joy was born. The support physically, spiritually and financially has been a blessing to us this year. We have developed a support group of families that we now call friends. The MVDSA is a volunteer lead non-profit organization. The Buddy Walk supports our Moms Night Out, DADS group, Playgroups and monthly family meetings. With the support of MVDSA, friend and family we are proud to say that Joy is a happy, healthy little girl who happens to have Down syndrome! “

Funds raised through the Buddy Walk also provide scholarship funds for individuals with Down syndrome that can be used for therapies, tutors, and lessons to help those kiddos become equipped to do their best!

As Jess stated, the MVDSA is essential to the families it serves. This is why I’m raising money for the Buddy Walk again this year. I love the awesome people in my community with Down syndrome and I’m proud to support them and their families.

I set a $500 fundraising goal this year and I even got my family involved! Bobby, Joshua, Sophie, and Jonah are walking with me and Bobby and the big kids all have fundraising goals, too. We would LOVE your support in our fundraising efforts! I could use some $5 Friends!
