I loooooooove Guacamole (Emily and I kind of freaked out over some amazing guac we had in Miami recently), but I have never made it! I was very afraid of dealing with the avocados for some reason. Especially after reading Tess’s #PinFTW that was NOT a win, ha ha.) But I conquered my fear this weekend and my dear husband and I made some super-yummy Guacamole that Rocks with Ro*tel! The recipe is so simple, with just a few ingredients: avocados, Ro*tel, lime juice, onion, salt, and ground black pepper. It only took us about 10 minutes to make, and it was FREAKING DELICIOUS!! You guys, it was so so so so so so SO good. I was seriously impressed with both the simplicity & ease of the recipe, and of course, MYSELF. 🙂 Ha, ha.
This weekend I am helping my BFF Luanne throw a graduation/18th birthday party for her daughter (and our favorite babysitter) Krisha. I’ll be making Guacamole that Rocks again as well as four other yummy party-perfect Ro*tel-based recipes. Can’t wait to let you know how those turn out!

Love guacamole! I think it’s hilarious that you had avocado issues, but I’m glad you were able to overcome them 🙂 Tell Luanne congrats for me, how awesome her daughter is graduating!
I make Ro Tel Cheese dip. A can of Ro Tel, shredded cheese, small crock pot. Heat, dip and eat.

my favorite is definitely their queso dip… but I might have to try a bean dip soon, too!! YUM!!
When we go out for mexican, the eternal question on my mind is: guacamole or queso?? If I’m feeling crazy, I splurge for both. 🙂 I LOVE me some guac, and can’t believe I worked at Chi-Chi’s for years while at Asbury and was kinda scared of the stuff.
Oh man, I miss Chi-Chi’s!! Memories…
Oh- and I don’t have a blog to post to but I did make a variation on this -http://pinterest.com/pin/69524387967224442/ for teachers gifts. I rolled up a beach towel and tied a bottle of lotion to it with ribbon then put it into tote bags from TJ Maxx. I had planned on doing sunscreen but my daughter picked out lotion instead. I hope they like them!
Woohoo, I finally made it! Okay, so I have a few comments and questions.
1. Did I follow all the rules? I was frantic for a second, going back and forth between my blog and yours.
2. I looooove guac! I like a chunkier version… just dice up the avocado, tomato, little onion, cilantro and add lots of lime! Mix it up, not blend it up… remember it’s supposed to be chunky! Yummmmm – O!
3. While my link is for Butterfly Bathroom jar… in my post, you will find a link to a blog post about a Kitchen Cake. You should check that one out too. Because, yeah, I did TWO Pinterest projects AGAIN this week!

Ok, 1) yes, good job! 2) ALL the avocados at Kroger were really ripe and soft. It was THEIR fault for not being chunkier, all I did was mix it with a spatula! GEEZ! 3) The Kitchen Cake is really cute 4) On your lunch break??! SHOW OFF! 🙂
